
Get to know: Scott Sanchez, FNS Coordinator
Scott always thought he had a passion for cooking and he was really wanting
to take the next step into a career that was more focused in something
culinary. A good friend of his told him about Kirby and how great it was
to work there. Scott is very hardworking, loyal, trustworthy and calm.
"The best thing about my job is learning something new almost every
day about cooking and getting to play around with ingredients to create
something new.
From working at Kirby Medical Center, I have gained so much more confidence
in my abilities as a cook and most importantly confirmation that cooking
is indeed my passion."
"The best moment of my career is having all the hard work I’ve
put in be recognized and result in a promotion."
Scott's life outside of Kirby:
Outside of work, he loves building computers. Something he doesn't
get to do nearly as much as he would like to.
Scott's typical work day:
He has 3 different kinds of work days. His weekends which consist of prepping
and setting up for the week. Monday and Tuesday which consists of cutting,
portioning and packaging everything for Prairie fresh. If he is working
Wednesday-Friday it consists of prepping for lunch that day and getting
lunch for the next day ready as well taking care of patient needs.
"I’m extremely excited to see exactly how far we can take Prairie
Fresh this year. I can’t wait to see how far we can push this thing."

Get to know: Bianca Zettler, FNS Cook
Bianca had been working for McDonald's for 6 or 7 years and always
enjoyed customer service but realized it was time for a change. Her brother,
Scott, convinced her to apply for the open cafe position here at Kirby
Medical Center.
"I knew I eventually wanted to be a cook like him because I enjoyed
watching the pride he took in caring for patient nutrition needs and I
wanted to do the same.
There are so many reasons I enjoy my job but the one I love the most is
the team of people I work with in FNS. They are all so wonderful and helpful.
We jump to help each other out whenever we can. Not many work teams are
as close-knit as we are. From working at Kirby, I have gained confidence
in my job and even my everyday life. Everyone at Kirby is so supportive
and welcoming and that is very refreshing for me.
The best moment of my career so far would be working with my brother, Scott,
on Prairie Fresh. We have it pretty well hashed out now. He does the most
production of food and I stick with the administrative side of it by sending
all the emails. The fact that Kirby is implementing this is such a cool
thing to be a part of."
Bianca's life outside of Kirby:
Bianca is married and has been with her husband going on 9 years in August.
They have 3 beautiful children together, Reece (8), Elijah (3), and their
daughter Alice who would have been 5 this year but sadly passed away 4
years ago.
"My husband is a wonderful man. He is hilarious and the kids definitely
got that from him. I don't know what I would do without them."
Bianca has 6 siblings: Armando, Scott, Carlos, Sophia, Sulamita, and Charlotte.
Spending time with her family is her favorite thing to do outside of work.
With how quick kids grow up, she and her husband try not to miss a second
with them.
Bianca's typical work day:
Her everyday work day is mainly cooking and prepping for the next day but
she finds time to have a little fun with her coworkers in the kitchen
while they are working. They are able to have fun together and remain
professional at the same time.
"I am excited to see how Prairie Fresh will come and how far we can
take it. We have a wonderful team and I think this will turn into a great
thing with all the people working behind it to make it the best it can be."
Scott and Bianca's signature items with Apple A Day Cafe are the Sanchez
Soup and Abuelit's Rice.
